This Mediterranean-style olive bread is everything your kitchen’s been missing — fresh, fragrant, and packed with flavor. As it bakes, the aroma alone will bring everyone running to the table. Bonus: it’s easy, rustic, and doesn’t even need yeast.

  1. In a large mixing bowl, combine the all-purpose flour, bread flour, baking powder, and baking soda.
  2. Add the orange juice and water to the dry ingredients and stir until a smooth, sticky dough forms. The dough will be a bit loose — that’s normal.
  3. Chop the olives or leave them whole if you prefer, then fold them into the dough.
  4. Line a round baking pan with parchment paper and pour the dough into the pan. Use a wooden spoon to smooth the top.
  5. Press a few whole olives into the top for decoration.
  6. Bake in a preheated oven at 400°F (200°C) for about 40 minutes, or until the bread has a golden-brown crust and sounds hollow when tapped.

Serving Tips:

  • Slice and serve warm with olive oil and sea salt.
