The humble eggplant transforms into a delicacy with this easy marinated recipe. Layered with fresh mint, garlic, and a tangy olive oil and vinegar dressing, these Marinated Eggplants are versatile and bursting with Mediterranean flavor. Whether served as an appetizer, a side dish, or a sandwich ingredient, they’re a fridge staple that only gets better with time.
Ingredients:
- 1 pound (500 g) eggplants
- 4 garlic cloves, minced
- ¾ cup (180 ml) olive oil
- Salt and pepper to taste
- Fresh mint leaves (or basil as a substitute)
- 3 tablespoons wine vinegar (apple cider vinegar works too)
Preparation:
- Prepare the Eggplants:
Wash the eggplants and slice them into thin rounds. Sprinkle them generously with coarse salt and place them in a colander. Let sit for about 40 minutes to draw out any bitterness. Rinse the eggplant slices under cold water and pat them dry with paper towels. - Cook the Eggplants:
- Oven Method: Preheat the oven to 375°F (190°C). Arrange the eggplant slices on a greased baking sheet and bake for 10–15 minutes until tender.
- Pan-Fried Method (Optional): Heat olive oil in a skillet over medium-high heat and fry the eggplant slices until golden on both sides. Place them on a paper towel to absorb excess oil.
- Assemble the Marinade:
In a heatproof container with a lid (like a glass or ceramic dish), layer the cooked eggplant slices. Sprinkle each layer with salt, pepper, chopped mint, and minced garlic. Drizzle with wine vinegar and olive oil. - Marinate and Store:
Cover the container tightly and refrigerate for at least a few hours or overnight for the flavors to meld. The marinated eggplants can be stored in a sealed container in the fridge for up to 7 days.
Serving Suggestions:
Serve as an appetizer, a side dish to grilled meats, or a flavorful addition to sandwiches.
