When you want to make something comforting, flavorful, and easy, Lisbon-Style Hake is the perfect dish. It’s a layered combination of tender fish, potatoes, onions, and tomatoes, slowly cooked with wine and spices for a rich Mediterranean taste.

Ingredients:

  • 2.2 lbs (1 kg) hake fillets
  • 1 large can of peeled tomatoes
  • 1.1 lbs (½ kg) onion
  • 2.2 lbs (1 kg) white potatoes
  • 4-5 garlic cloves
  • ¾ cup (6.8 fl oz / 200 ml) white wine
  • A little tomato paste
  • all-purpose seasoning
  • Salt
  • Black pepper
  • Sweet paprika
  • 2 teaspoons sugar
  • A small piece of celery root
  • Plenty of chopped parsley

Instructions:
Slice the potatoes into rounds, finely chop the onion, and mince the garlic.

In a wide, oven-safe dish, layer the ingredients in this order:

  1. A layer of potatoes, sprinkled with all-purpose seasoning.
  2. A layer of chopped onions and a bit of garlic.
  3. A layer of frozen (not thawed) hake fillets, cut in half.
  4. Chopped peeled tomatoes, another sprinkle of all-purpose seasoning, and sweet paprika.
  5. Repeat the layers until all ingredients are used, ending with a layer of potatoes on top.

Pour in the wine and add just enough water to cover the bottom of the dish. Cover and cook over medium heat for 45-60 minutes. Do not stir the dish—just gently shake the pot occasionally while cooking. Before serving, sprinkle generously with fresh parsley.
