This easy no-bake cake is perfect for warm days or when you need a quick dessert with a wow factor. Made with soft ladyfingers, creamy vanilla pudding, fresh bananas, and juicy peaches, this chilled treat is finished off with whipped cream for a refreshing, fruity bite in every slice.
Ingredients
- 3 small packages of ladyfingers (about 7 oz each)
- 4 ¼ cups whole milk
- 3 (1 oz) packets of vanilla pudding mix
- ¾ cup sugar
- ⅓ cup margarine (or unsalted butter)
- 3 bananas
- 3–4 peaches
- 1 cup heavy whipping cream (or whipped topping)
Instructions
- Cook the pudding:
Set aside about ½ cup of milk in a shallow bowl for dipping the ladyfingers. In another small bowl, dissolve the pudding mix in ½ cup of cold milk. Heat the remaining milk in a saucepan with the sugar until warm, then add the dissolved pudding mixture. Cook over medium heat, stirring constantly, until thickened. Remove from heat, stir in margarine until melted, and let cool slightly. - Layer the cake:
Dip ladyfingers briefly into the reserved milk and arrange them on a serving tray as the base layer. Spread half of the cooled pudding over the ladyfingers and top with sliced bananas. Add another layer of dipped ladyfingers, spread the remaining pudding, and top with diced peaches. - Decorate:
Whip the heavy cream until stiff peaks form and spread it over the entire cake. Optionally, decorate with extra fruit or a sprinkle of crushed ladyfingers.
Tip:
You can substitute whipped cream with whipped topping or instant whipped topping mix (like Dream Whip) if you prefer a lighter texture or slightly sweeter flavor.
