Ingredients
2 cups whole wheat pasta (such as rotini or penne)
1 (5-ounce) can tuna in water, drained
1 medium cucumber, peeled and diced
1 cup cherry tomatoes, halved
¼ cup black or green olives, sliced
¼ cup red onion, finely chopped
½ cup canned sweet corn, drained
2 tablespoons capers (optional)
3 tablespoons extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
Salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley or dill
Instructions
- Cook the pasta according to the package directions until al dente. Drain and rinse under cold water to cool completely.
- In a large bowl, combine the cooled pasta, tuna, cucumber, cherry tomatoes, olives, red onion, corn, and capers if using.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the salad and toss gently to combine.
