In the mood for a savory, simple meal that feels like a warm hug from your kitchen? This baked dish of leeks with mushrooms and eggs is the kind of rustic comfort food you’d expect to find in a countryside bistro—but it’s incredibly easy to make at home. Topped with melty cheese and baked until golden, it’s the perfect way to use up fresh veggies and enjoy something hearty yet wholesome.

Ingredients (serves 4):

  • 2–3 leeks, washed and sliced into rounds
  • 10 oz mushrooms (white button, oyster, or porcini), cleaned and sliced
  • 7 oz yellow cheese (like gouda, cheddar, or Swiss), coarsely grated
  • 5–6 large eggs (or as needed)
  • 2 tbsp olive oil or butter
  • ½ tsp sea salt
  • ½ tsp seasoning blend (like all-purpose seasoning)

Instructions:

  1. In a large skillet or pot, heat the oil or butter and sauté the sliced leeks and mushrooms over medium heat. Add salt and seasoning. Cook for about 15 minutes, stirring occasionally, until softened.
  2. Transfer the sautéed vegetables into a baking dish. Using a spoon, create 5–6 small wells in the mixture—about 1 inch apart.
  3. Crack one whole egg into each well, making sure the yolks remain intact.
  4. Sprinkle grated cheese over the entire dish.
  5. Bake in a preheated oven at 425°F (220°C) for 10–15 minutes, or until the egg whites are set and the yolks are done to your preference.

Tip: For smaller portions, cook everything in a covered deep skillet on the stovetop instead of baking.

Serve warm with a crusty slice of bread or a green salad for a satisfying, protein-rich vegetarian meal.
