Flambéed chicken with orange is a dish where the magic happens in front of your guest, just before finishing the preparation. For added drama, perform the flambé in the dark. You can flambé meat dishes, omelets, fruit, ice cream, and other desserts, but let’s start with this orange chicken recipe.
Ingredients (Serves 4)
- 4 chicken fillets (about 1.3 lbs)
- Salt
- Pepper
- 2 tbsp butter
- 1 cup fresh orange juice (about 8 fl oz)
- 2 tbsp bourbon whiskey
For the side dish:
- 7 oz green beans
- 7 oz broccoli
- 2 tbsp olive oil
For serving:
- 2 tbsp toasted almond flakes
Preparation
- Sprinkle the chicken fillets with salt and pepper.
- In a hot skillet, melt the butter and sear the chicken on both sides.
- Pour in the fresh orange juice, cover the skillet, and simmer over low heat for about 20 minutes.
- Remove the chicken and cook the sauce until it reaches the desired thickness.
- Return the chicken to the skillet, pour the whiskey over it, and ignite carefully to flambé.
- Boil the green beans and broccoli in salted water until tender. Drain and toss with olive oil.
Serving
Serve the warm chicken with the orange sauce and the cooked vegetables. Sprinkle toasted almond flakes over the top for a crunchy garnish.
