As spring ushers in new growth, grape leaves offer a versatile and delicious opportunity to preserve a piece of the season. Carefully harvested and prepared, these leaves become the foundation for delightful Mediterranean rolls, combining tradition with culinary creativity. Whether for stuffing or wrapping, this time-tested method ensures you can enjoy their fresh flavor all year long.

Ingredients for Preserving Grape Leaves:

Fresh grape leaves (about 4–6 lbs)

Kosher salt

Dry white wine

Instructions for Preserving Grape Leaves:

Pick grape leaves in the spring when they are tender and large enough for rolls. Wash and dry thoroughly.

Sprinkle a small amount of salt on each leaf and stack them in bundles of 15.

Roll each bundle tightly like a cylinder and pack into a 5-quart glass jar.

Repeat the process over 2–3 days as the leaves settle and more space becomes available.

Once the jar is full, press the leaves down with crossed wooden sticks or food-safe weights. Fill the jar with dry white wine to cover the leaves completely.

Seal the jar and store in a cool, dark place. If the wine level drops over time, add more to ensure the leaves remain submerged.

Properly stored leaves will keep for up to one year, ready for use whenever needed.

Ingredients for Mediterranean Rolls with Grape Leaves (Serves 4):

5 tbsp sunflower oil

1 tsp black pepper

15 preserved grape leaves

10 oz ground meat

1 tsp salt

1 tsp paprika

1 tsp vegetable seasoning (optional)

1 small onion, finely diced

1 egg

Instructions for Mediterranean Rolls:

Heat sunflower oil in a pan and sauté the finely diced onion until translucent.

Add ground meat, salt, black pepper, paprika, and vegetable seasoning. Stir well.

Mix in one egg to bind the filling and set aside.

Bring a pot of salted water to a boil.

Remove from heat and submerge grape leaves for a few minutes until soft and slightly discolored.

Lay a grape leaf flat, vein-side up, and place about 1 tsp of filling in the center.

Fold the sides inward and roll tightly, similar to making a burrito.

Line the bottom of a pot with extra grape leaves to prevent sticking.

Arrange the rolls snugly in the pot. Add water to cover and top with additional grape leaves.

Simmer gently on low heat until the rolls are cooked through.

Pair the rolls with a dollop of sour cream for a nice accompaniment.
