This vibrant layered orange cake is a delightful treat for any occasion. Fluffy sponge layers are filled with creamy orange pudding and topped with a glossy chocolate glaze. Fresh orange segments and a light sprinkling of pistachios make it bright, refreshing, and perfect for spring or sunny-day gatherings.

Ingredients: 175 g (¾ cup) butter or margarine, 175 g (¾ cup) sugar, 1 packet vanilla sugar (or 1 tsp pure vanilla extract), pinch of salt, 3 eggs, 150 g (1¼ cups) wheat flour, 30 g (¼ cup) cornstarch, 1 tsp baking powder, 2 packets vanilla pudding mix, 350 ml (1½ cups) fresh orange juice, 600 ml (2½ cups) whipped cream, 150 g (5 oz) cooking chocolate, 2 tbsp vegetable oil, chopped pistachios, fresh orange segments.

Preheat the oven to 180°C (350°F) for electric ovens or 160°C (320°F) for fan ovens. Beat the butter or margarine until light and fluffy. Gradually add sugar, vanilla, and salt. Mix in the eggs one at a time, beating well after each addition. Sift together flour, cornstarch, and baking powder and fold into the butter mixture until smooth. Divide the batter into four equal portions and pour each into a greased 26 cm (10-inch) round springform pan. Bake each layer separately for about 10 minutes and let cool completely on a wire rack.

Prepare the pudding according to the package instructions, substituting milk with fresh orange juice and adding whipped cream. Transfer the mixture to a piping bag for easier spreading between layers. Place the first cake layer on your serving platter and pipe a generous amount of the orange filling evenly on top. Repeat with the remaining layers. Decorate the top with pre-cut slices, fresh orange segments, and a light sprinkling of chopped pistachios.

Melt the chocolate with vegetable oil in a double boiler over low heat and pour evenly over the top of the cake. Allow to set before serving. Chill in the refrigerator for at least an hour to let the flavors meld. For extra moisture, brush the layers lightly with orange juice before adding the filling.
