Enjoy the rich flavors of winter with this juicy plum compote infused with cinnamon, cloves, star anise, and a touch of wine. Perfect as a dessert on its own or paired with cakes and pastries, this homemade treat brings warmth and holiday cheer to your table.
Ingredients (for 6 jars):

6 ½ lbs ( plums, pitted

1 small piece fresh ginger, peeled and chopped

1 cinnamon stick

4 whole cloves

3 star anise

1 cup (8 fl oz) red wine vinegar

2 ½ cups gelling sugar

3 1/8 cups mild red wine

1 cup water
Instructions:

Wash and pit the plums.

Place the ginger, cinnamon, cloves, and star anise in a clean piece of cheesecloth and tie into a bundle.

In a saucepan, combine vinegar, water, and gelling sugar. Add the spice bundle and bring to a gentle boil over medium heat for 2 minutes. Add more water if needed.

Pack plums into sterilized jars. Remove the spice bundle from the syrup and stir in the red wine.

Pour the syrup over the plums, seal jars, and cook in a water bath for 25 minutes. Make sure the water reaches the rim of the jars. Allow to simmer gently, then remove and let cool.
