This juicy roast turkey with pomegranate and bacon stuffing is the perfect centerpiece for your holiday feast. Tender, flavorful, and easy to prepare, this recipe will impress your guests and make your celebrations unforgettable.

Ingredients:

  • 1 whole turkey (about 6.6 lbs)
  • ¾ cup butter (180 g)
  • 3.5 oz breakfast sausage (or similar sausage for roasting)
  • 2 heads of garlic
  • 5.3 oz smoked bacon (about 1 cup)
  • 5.3 oz coarsely chopped hazelnuts (about 1 cup)
  • 1 medium apple, diced
  • 2 pomegranates (for seeds)
  • Soup or broth for basting
  • Salt and pepper to taste

Instructions:

  1. In a pan, melt ¾ cup butter and sauté the chopped bacon and minced garlic. After 5 minutes, add the sausage (cut into small pieces) and the diced apple. Cook on low heat for about 10 minutes, stirring occasionally.
  2. Add salt and pepper to taste. In a separate pan, sauté the hazelnuts in a little butter and add the pomegranate seeds to the hazelnuts. Combine this with the previously cooked sausage and apple mixture, then stuff the turkey with the prepared filling. Close the opening of the turkey with toothpicks or tie it with kitchen twine.
  3. Season the outside of the turkey with salt and pepper. Cover it with slices of smoked bacon, and place it in a roasting pan. Pour the remaining melted butter over the turkey.
  4. Preheat the oven to 350°F. Roast the turkey for 2.5 hours, basting it every 30 minutes with broth or the turkey’s own juices. For extra crispiness on the skin, cook for an additional 30 minutes if desired.
  5. Once the turkey is fully roasted and golden brown, remove it from the oven and let it rest for 10-15 minutes before carving. Serve with your favorite side dishes.
