Indulge in this decadent chocolate cake with a rich walnut filling and creamy cocoa glaze. Perfect for special occasions or a sweet treat, this easy homemade cake will satisfy all your dessert cravings.
Ingredients:
- 1 ½ cups walnuts, coarsely chopped
- 1 ½ cups chocolate powder (unsweetened)
- 3 tbsp cocoa powder (unsweetened)
- 1 ½ cups heavy cream
- 3 tbsp unsalted butter
- 1 tsp vanilla extract
- 1 ½ cups sugar
- 3 large eggs
- 2 ¼ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 ¼ cups plain yogurt
- ½ cup powdered sugar
- Butter for greasing the pan
- Flour for dusting the pan
Instructions:
- Set your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter and dust it lightly with flour.
- Roughly chop the walnuts and set them aside.
- In a saucepan, heat the heavy cream over medium heat. Add the cocoa powder and 1 ½ cups of chocolate powder, stirring until smooth and fully combined. Remove from heat and allow it to cool.
- In a large bowl, whisk together the sugar and eggs. Add in the yogurt, followed by the flour, baking powder, and salt. Gradually mix in the cooled chocolate mixture until everything is evenly combined.
- Pour half of the batter into the prepared cake pan. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely on a wire rack.
- Once the cake has cooled, slice it horizontally into two layers. In a separate bowl, melt the remaining chocolate (about 1 ½ cups) with a small amount of butter and water to create a smooth glaze.
- Spread the chocolate glaze over the top of the bottom cake layer, and then place the second layer on top. Refrigerate the cake for several hours, ideally overnight, to allow the glaze to set.
- Before serving, frost the top of the cake with the remaining cream mixture, or simply dust with cocoa powder or powdered sugar for a light finish.
