Tender chicken breasts are roasted with a colorful mix of fresh vegetables, infused with aromatic herbs and spices, and finished with a zesty Italian dressing. This recipe is easy, wholesome, and packed with flavor, making it a crowd-pleaser for family and friends.

Ingredients (Serves 6–8)

  • 6–8 boneless, skinless chicken breasts
  • 5 large carrots, peeled and cut into chunks
  • 4 medium red potatoes, unpeeled, cubed (about 1 inch)
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 medium green bell pepper, thinly sliced (optional)
  • 1 cup sliced fresh mushrooms
  • 1 cup zucchini slices (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon crushed red pepper flakes (optional for heat)
  • Salt and freshly ground black pepper, to taste
  • 1 (16 oz) bottle zesty Italian dressing
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 375°F. Lightly grease a large casserole dish with 1 tablespoon olive oil.
  2. Place chicken breasts in the dish. Sprinkle evenly with garlic powder, smoked paprika, oregano, basil, red pepper flakes, salt, and black pepper.
  3. Arrange carrot and potato chunks around and on top of the chicken. Drizzle half of the Italian dressing over the chicken and vegetables. Cover with foil.
  4. Bake for 30–35 minutes. Remove from oven, gently turn the chicken, and add broccoli and cauliflower florets. Drizzle with the remaining Italian dressing. Cover and bake another 25–35 minutes until chicken is fully cooked (internal temp 165°F) and vegetables are tender.
  5. During the last 10 minutes, add mushrooms, zucchini, and green pepper for added flavor and texture.
  6. Serve warm, garnished with fresh parsley or basil if desired.

  • For an extra layer of flavor, squeeze fresh lemon juice over the chicken before serving.
  • Swap smoked paprika with sweet paprika for a milder taste.
  • Leftovers can be refrigerated for up to 3 days and reheated gently in the oven.
