Vanilla Ice Cream
Ingredients:
- 1 vanilla bean
- 1 quart (4 cups) milk
- 10 egg yolks
- 10–20 tablespoons sugar (adjust to taste)
Instructions:
- Split the vanilla bean lengthwise and scrape out the seeds. Add the seeds and pod to the milk. Bring the milk to a gentle boil.
- Whisk the egg yolks and sugar together until pale and creamy.
- Slowly pour the hot milk into the egg mixture in a thin stream, whisking constantly to prevent curdling.
- Return the mixture to the stovetop and cook over low heat, stirring continuously, until thickened enough to coat the back of a spoon.
- Strain the custard through a fine sieve to remove the vanilla pod and any lumps. Let it cool to room temperature.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, or freeze in a shallow container, stirring occasionally until fully set.
Variations:
- Chocolate Ice Cream: Replace the vanilla bean with 3.5 oz of chocolate (melted and mixed into the milk).

- Add powdered sugar and mix well.
- In a separate bowl, whip the heavy cream until stiff peaks form.
