Ingredients
- 2 cups chopped carrots (about 8 oz)
- 1 cup chopped parsnips (about 4 oz)
- 1 cup chopped celery (about 4 oz)
- 1 cup chopped parsley (about 1 oz)
- 2 tablespoons chopped fresh basil
Instructions
- Chop carrots, parsnips, celery, parsley, and basil into small pieces.
- Spread all the chopped vegetables evenly on a clean surface or baking sheet to dry overnight at room temperature.
- Preheat your oven to 120°F (50°C).
- Place the dried vegetables in the oven for about 30 minutes to remove any remaining moisture.
- Once fully dried, the weight will reduce significantly (from over 2 lbs fresh veggies to less than 3.5 oz dried).
