Ice cream sandwiches are a sweet and easy treat everyone loves. Perfect for summer days!
Ingredients:
1 package of chocolate chip cookies
2 cups milk
10 egg yolks
¾ cup sugar
1 ¼ cups heavy cream
1 vanilla bean (or 1 teaspoon vanilla extract)
Preparation:
Combine the milk and the vanilla bean seeds (or vanilla extract) in a saucepan. Add half of the sugar and heat until it just starts to boil. Remove from the heat and let it cool slightly.
In a separate bowl, beat the egg yolks with the remaining sugar. Slowly pour the warm milk into the yolk mixture while whisking constantly. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens slightly (do not let it boil).
Remove from heat and let it cool completely. Gently fold in the heavy cream. Freeze until firm.
Once the ice cream is set, make sandwiches by placing a scoop of ice cream between two chocolate chip cookies. Roll the edges in mini chocolate chips if desired and store in the freezer until ready to serve.
