Hungarian Chocolate Cake is a rich, elegant dessert layered with light cocoa sponge, creamy chocolate filling, juicy cherries, and a glossy chocolate coating. This cake is perfect for celebrations or whenever you want a refined style chocolate dessert at home.
Ingredients
For the Chocolate Sponge
- 2 large eggs, separated
- 1/2 cup granulated sugar (divided)
- 1/3 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder (divided)
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
For the Cherry Layer
- 1 jar (about 13 ounces) sour cherries, drained
- 1 tablespoon cherry juice (reserved from jar)
- 1 tablespoon sugar (optional, if cherries are very tart)
For the Cream Filling
- 1 1/4 cups heavy whipping cream
- 1 tablespoon powdered sugar
- 1 teaspoon unflavored gelatin
- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla extract
For the Chocolate Glaze & Decoration
- 8 ounces dark chocolate, chopped
- 1 tablespoon coconut oil
- 1/2 teaspoon espresso powder (enhances chocolate flavor)
Instructions
1. Prepare the Sponge
- Preheat oven to 350°F. Line a 9×9-inch square pan with parchment paper.
- Beat egg yolks with 1/4 cup sugar until pale and creamy.
- Stir in vanilla extract.
- In a separate bowl, whisk flour, 2 tablespoons cocoa powder, and salt.
- Gently mix dry ingredients into the yolk mixture.
- Beat egg whites with remaining 1/4 cup sugar until soft peaks form.
- Fold egg whites carefully into batter.
- Spread evenly in prepared pan and bake for 10–12 minutes.
- Cool completely and remove parchment paper.
2. Prepare the Cherry Layer
- Drain cherries well.
- If desired, toss with 1 tablespoon sugar and a little reserved cherry juice for extra flavor.
3. Make the Cream Filling
- Dissolve gelatin in 1 tablespoon warm water and let bloom for 5 minutes.
- Beat cream cheese with granulated sugar, cocoa powder, and vanilla until smooth.
- In a separate bowl, whip heavy cream with powdered sugar until soft peaks form.
- Warm bloomed gelatin briefly until liquid (do not boil) and mix into cream cheese mixture.
- Fold whipped cream gently into cream cheese mixture until smooth and fluffy.
4. Assemble the Cake
- Place sponge layer into a square cake frame or pan.
- Arrange cherries evenly over the sponge.
- Spread cream filling evenly on top.
- Refrigerate for at least 3 hours until set.
5. Chocolate Glaze & Decoration
- Melt dark chocolate with coconut oil and espresso powder over a double boiler.
- Pour half over chilled cake and spread evenly. Let set.
- Spread a thin layer of remaining chocolate on parchment or a marble surface.
- Once slightly firm, scrape with a spatula to create chocolate curls.
- Remove cake from frame and coat sides with remaining chocolate.
- Decorate top with chocolate curls.
