Ingredients
- 2 cups (450 ml) lukewarm milk
- 2 teaspoons sugar
- 1 teaspoon salt
- 1 packet of active dry yeast (2 ¼ teaspoons or 50 grams fresh yeast)
- 1 large egg + 1 egg yolk (reserve the white for brushing)
- ⅔ cup (160 ml) oil
- 2 sticks (1 cup or 250 grams) margarine
- 8 cups (1 kg) all-purpose flour + ¾ cup (100 grams) additional for kneading
Optional Fillings:
- Egg yolk mixed with crumbled cheese
- Ham with grated cheese
- Nutella, jam, or any filling of your choice
Instructions
- Activate the Yeast:
Dissolve the yeast in ¼ cup (50 ml) of lukewarm milk with 2 teaspoons of sugar. Let it sit in a warm place until frothy (about 10 minutes). - Mix Wet Ingredients:
In a bowl, beat the egg and egg yolk. Add oil, salt, and the remaining 2 cups (400 ml) of milk. Mix well. Add the activated yeast to this mixture. - Form the Dough:
Gradually add the flour to the wet mixture, stirring with a wooden spoon until a dough forms. Turn the dough out onto a floured surface and knead, adding more flour as needed, until smooth and elastic. Divide the dough into two parts, then further divide each part into 8 balls (16 total). - Layer with Margarine:
Roll each ball into a circle, spread margarine over 7 of them, and stack them, leaving the top layer uncoated. Repeat with the other 8 balls. Let the stacked dough rest under a cloth for 20 minutes. - Roll and Cut:
Roll out each stack into a large circle. Divide it into 12 triangles by cutting the circle into quarters, then dividing each quarter into thirds. - Add Fillings:
Place your desired filling at the widest part of each triangle. Roll the dough tightly from the wide end to the point, forming croissants. - Proof and Bake:
Place the croissants on a baking sheet and let them rise for 45 minutes. Preheat the oven to 430°F (220°C). Brush the croissants with egg white. For savory ones, sprinkle with sesame or flax seeds. Bake for 12–15 minutes, or until golden brown. - For Sweet Croissants:
Brush with sugar syrup immediately after baking and sprinkle with powdered sugar once cooled.
Tip:
Freeze unbaked croissants after shaping. When ready to bake, thaw at room temperature, proof, and bake as usual.
