They’re plump, they’re sweet, and they vanish faster than summer vacation — strawberries are having their moment! Don’t let the season pass you by without making a bottle (or three) of this refreshing, all-natural homemade strawberry juice. It’s the drink your fridge deserves.
Recipe: Homemade Strawberry Juice
Ingredients:
- 2.2 pounds (1 kg) fresh strawberries
- 8 1/2 cups (2 liters) water
- 1 packet citric acid (about 0.35 oz or 10 g)
- 1 1/4 cups (250 g) sugar
Instructions:
- Wash and hull the strawberries. Blend them until smooth.
- Pour the strawberry purée into a large pot. Add water, citric acid, and sugar.
- Cook over medium heat, stirring occasionally until the sugar dissolves.
- Once the mixture begins to boil, continue cooking for another 5 minutes, stirring to prevent it from boiling over.
- Pour the hot juice into sterilized glass bottles (warm them in the oven first to prevent cracking).
- Let it cool. Store in the refrigerator for up to 7 days.
- For larger batches, once cooled, transfer to plastic bottles and store in the freezer.
