Autumn brings the perfect opportunity to enjoy juicy plums in a simple yet flavorful dessert. This rustic pie is easy to prepare, comforting, and full of fruity sweetness.
Ingredients:
1 sheet puff pastry (16 oz / 450 g)
1 1/2 lb (680 g) fresh plums, pitted and quartered
1/3 cup (65 g) granulated sugar
1/3 tsp ground cinnamon
1/2 tsp vanilla extract
2 tsp fresh lemon juice
1 tsp finely grated lemon zest
2 tsp cornstarch
1 large egg, beaten
Instructions
Place the puff pastry on a parchment-lined baking sheet and form a rough circle. Preheat the oven to 360°F (182°C). In a bowl, mix the plums with sugar, cinnamon, vanilla, lemon juice, lemon zest, and cornstarch. Spoon the filling into the center of the pastry, leaving about a 1-inch border. Fold the edges over the fruit to form a rustic crust. Brush the pastry with the beaten egg. Bake for 28–32 minutes until the crust is golden and puffed. Let cool for 15–20 minutes before slicing. Serve plain or with a scoop of vanilla ice cream.
