Ingredients:

4.4 lb melon

4.4 lb sugar

Juice of 4 lemons

30 fl oz water

1 oz fresh ginger

How to make it:

Peel the melon, remove the seeds, and cut it into large pieces. Place the melon in a large pot, add the sugar, and let it sit for about 12 hours.

Pour the lemon juice into the pot with the melon. Add the water and fresh ginger.

Cook over medium heat for about 40 minutes, stirring constantly. If needed, add a little more water while cooking.

Pour the hot marmalade into sterilized jars, seal, and allow to cool. Store in a cool place.
