Homemade Blueberry Ice Cream Ingredients:

  • 1¾ cups fresh or frozen blueberries (about 9 oz)
  • ½ cup granulated sugar
  • 1 teaspoon fruit pectin
  • Juice of ½ lemon
  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract

Instructions:

In a medium saucepan, combine the blueberries, sugar, and pectin. Stir well and cook over medium heat.

Add the lemon juice, bring the mixture to a boil, and let it simmer for about 3 minutes, stirring occasionally.

Transfer the mixture to a bowl, cover with plastic wrap, and chill in the refrigerator until fully cooled.

In a large mixing bowl, whip the heavy cream until soft peaks form. Add vanilla extract while whipping.

Remove the cooled blueberry mixture from the fridge and stir to loosen it. Fold it gently into the whipped cream, then mix with a hand mixer until smooth and fully blended.

Pour the mixture into a freezer-safe container, spread evenly, cover with plastic wrap, and freeze for at least 3 hours or until firm.
