With its rich nutrients and refreshingly tart flavor, aronia juice is a powerhouse of vitamins and minerals. Making it at home is easier than you think and ensures you enjoy all the natural benefits of this superfruit. Whether served diluted over ice for a summer treat or as a health boost during colder months, this concentrated aronia juice is a must-try.
Ingredients:
- 4 ½ pounds fresh aronia berries
- 2 ¼ pounds granulated sugar
- 4 cups water
- Juice of 1 lemon
Preparation:
- Combine the water and sugar in a large pot. Heat over medium-high, stirring occasionally, until the mixture boils.
- Add the cleaned aronia berries to the boiling water. Return to a boil, gently pressing the berries with a wooden spoon to release their juices.
- Once boiling, reduce the heat and simmer for 2 minutes, stirring frequently. Remove from heat and let cool slightly.
- Strain the mixture through a fine mesh sieve or cheesecloth into a clean bowl, pressing the berries firmly to extract as much juice as possible.
- Pour the strained juice back into the pot and bring it to a gentle simmer. Stir in the lemon juice and cook for another minute.
- While still hot, pour the juice into sterilized glass bottles or jars. Seal tightly and let cool completely.
Storage and Serving:
Store the juice in a cool, dark place. This is a concentrate, so dilute it with water to your preferred taste before serving.
