These bite-sized treats are crunchy, nutty, and perfectly sweet with a burst of cherry in the center—great for holidays or gifting!

Ingredients:

  • 1 ¼ sticks (5.3 oz or 150 g) margarine (or unsalted butter)
  • 1 ¼ cups (5.3 oz or 150 g) powdered sugar
  • 1 egg yolk
  • 1 ⅔ cups (7 oz or 200 g) all-purpose flour
  • ¾ cup (3.5 oz or 100 g) ground hazelnuts

For coating and filling:

  • Candied cherries (or maraschino cherries, drained)
  • 1 egg white, lightly beaten
  • Finely chopped hazelnuts (for rolling the dough balls)

Instructions:

  1. In a large bowl, cream together the margarine and powdered sugar until smooth. Add the egg yolk and mix well.
  2. Stir in the flour and ground hazelnuts until a smooth dough forms.
  3. Wrap the dough in plastic wrap and refrigerate for a few hours (at least 2 hours).
  4. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Shape the chilled dough into small balls (about the size of a walnut).
  6. Roll each ball first in lightly beaten egg white, then in finely chopped hazelnuts.
  7. Place the balls on the baking sheet and press a cherry gently into the center of each.
  8. Bake for 12–15 minutes, or until lightly golden.
  9. Let cool before serving.
