This grilled fish dish is full of fresh summer flavors. Juicy peaches and a zesty red pepper salsa bring a sweet and tangy twist, while the fish stays light and perfectly seasoned. It’s a colorful, healthy meal that’s easy to make and great for warm days.
Ingredients:
For the marinade:
1/2 cup lemon juice (from about 4 lemons)
1/4 cup olive oil
4 ripe peaches
1/2 teaspoon ground paprika
1 garlic clove, minced
4 fish fillets of your choice (salmon, sea bass, cod, etc.)
Salt and black pepper to taste
For the salsa:
3 red bell peppers
2 green onions
Juice of 2 lemons
1 teaspoon dried oregano
1 garlic clove
1/2 hot chili pepper (or to taste)
Salt and black pepper to taste
Preparation:
Finely chop the red bell peppers and green onions, then combine them in a bowl with lemon juice, oregano, minced garlic, and chili pepper. Season with salt and pepper, and mix gently.
In a separate bowl, mix lemon juice, olive oil, ground paprika, and minced garlic. Place the fish fillets in the marinade and let sit for 30 minutes.
Peel the peaches, slice them into wedges, and grill them briefly on a grill or grill pan.
Grill the marinated fish until cooked through. Serve with the red pepper salsa and grilled peach slices.
