Swiss Chard Potato Bake

Serves 4

Ingredients:

  • 1 ⅓ lb potatoes (medium size)
  • 1 ¾ lb Swiss chard
  • 4 medium tomatoes
  • 9 oz mozzarella cheese
  • 10–15 black olives
  • Extra virgin olive oil
  • Salt and pepper to taste
  • 2 garlic cloves, minced
  • Dried rosemary and fresh basil

Instructions:

  1. Boil the potatoes in their skins. Once done, peel and cool them, then slice into rounds.
  2. Blanch Swiss chard in boiling salted water. Drain and set aside.
  3. Slice the tomatoes and mozzarella.
  4. In a greased ovenproof dish, layer potatoes, tomatoes, and Swiss chard vertically (not laid flat).
  5. Season with salt, pepper, rosemary, garlic, and basil.
  6. Top with mozzarella slices and black olives.
  7. Bake in a preheated oven at 400°F for 20 minutes.
  8. Garnish with fresh basil leaves and serve warm.

Turkey Rolls Stuffed with Swiss Chard

Serves 4

Ingredients:

  • 4 turkey cutlets, pounded thin
  • 1 lb Swiss chard
  • 1 lb fresh fava beans
  • 4–6 green onions
  • ½ bunch dill
  • 3 garlic cloves
  • 2 oz pancetta or smoked prosciutto
  • 1 bunch parsley
  • ⅓ cup dry white wine
  • 3–4 tbsp breadcrumbs
  • 2–3 shallots
  • Olive oil, salt, pepper, nutmeg to taste

Instructions:
Stuffing:

  1. Blanch the chard, drain, chop finely.
  2. Sauté green onions, pancetta, garlic, and parsley in olive oil.
  3. Add chopped chard, dill, nutmeg, salt, and pepper. Stir in breadcrumbs.
  4. Spread stuffing over each turkey cutlet, roll up, and secure with toothpicks.

Bake:

  1. Place rolls in a baking dish, drizzle with wine, and roast at 375°F until cooked through (about 25–30 min).

For the fava beans:

  1. Sauté shallots, pancetta, and garlic in olive oil.
  2. Add dill and shelled fava beans.
  3. Pour in water or broth, season, and cook until tender.
  4. Stir in 1 tsp breadcrumbs to thicken.

Serve turkey rolls on a bed of fava beans and drizzle with pan sauce.

Fava Beans with Smoked Ribs

Serves 4

Ingredients:

  • 2.2 lb fresh fava beans in pods
  • 1 lb smoked pork or goat ribs
  • 5 oz smoked pancetta
  • 1 onion, diced
  • 1 parsley root or celery root, grated
  • 1 tbsp tomato paste
  • Olive oil, salt, pepper

Instructions:

  1. In olive oil, sauté onion until soft. Add pancetta and parsley root and cook briefly.
  2. Stir in tomato paste, then add broth and ribs, cut into chunks.
  3. Cook until ribs are almost done. Add shelled and seasoned fava beans.
  4. Simmer until beans are tender and stew has thickened slightly.

Serve hot with mashed potatoes and a glass of red wine.

Bonus Recipe: Grilled Zucchini and Tomato Skewers

Perfect for early summer BBQs!

Serves 4

Ingredients:

  • 2 zucchinis, sliced into thick rounds
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 pint cherry tomatoes
  • 2 tbsp olive oil
  • 1 tsp oregano
  • Salt and pepper

Instructions:

  1. Preheat grill or grill pan.
  2. Toss veggies in olive oil, oregano, salt, and pepper.
  3. Thread onto skewers, alternating colors.
  4. Grill on each side for about 5–6 minutes until tender and slightly charred.
  5. Serve as a side dish or light main course.
