A refreshing citrus salad with chicken breast and peanuts, perfect for 4 servings:

Ingredients:

  • 400g chicken breasts
  • 1kg grapefruit
  • 1kg oranges
  • 300g lemons
  • 1 mango
  • Fresh salad greens (lettuce, lamb’s lettuce)
  • Eggs, flour, peanuts, breadcrumbs (for coating)
  • Olive oil and sunflower oil

Preparation:

  1. Peel the grapefruit, orange, and lemon with a knife, removing the white membrane (which can taste bitter), and slice into segments.
  2. Grind the peanuts and mix them with breadcrumbs.
  3. Slice the skinless chicken breasts into thin pieces, then coat them in flour, beaten eggs, and finally in the peanut-breadcrumb mixture.
  4. In a bowl, mix the citrus segments (grapefruit, oranges, and lemon) and season with olive oil, sugar, salt, and pepper.
  5. Peel the mango and slice it into thin pieces.
  6. Fry the breaded chicken in hot sunflower oil until golden. Place on absorbent paper to remove excess oil, then sprinkle with salt.

Assembly:
Start with a layer of fresh salad greens on a plate. Add the seasoned citrus segments, mango slices, and drizzle lightly with balsamic vinegar. Top with the crispy chicken pieces.
