A refreshing citrus salad with chicken breast and peanuts, perfect for 4 servings:
Ingredients:
- 400g chicken breasts
- 1kg grapefruit
- 1kg oranges
- 300g lemons
- 1 mango
- Fresh salad greens (lettuce, lamb’s lettuce)
- Eggs, flour, peanuts, breadcrumbs (for coating)
- Olive oil and sunflower oil
Preparation:
- Peel the grapefruit, orange, and lemon with a knife, removing the white membrane (which can taste bitter), and slice into segments.
- Grind the peanuts and mix them with breadcrumbs.
- Slice the skinless chicken breasts into thin pieces, then coat them in flour, beaten eggs, and finally in the peanut-breadcrumb mixture.
- In a bowl, mix the citrus segments (grapefruit, oranges, and lemon) and season with olive oil, sugar, salt, and pepper.
- Peel the mango and slice it into thin pieces.
- Fry the breaded chicken in hot sunflower oil until golden. Place on absorbent paper to remove excess oil, then sprinkle with salt.
Assembly:
Start with a layer of fresh salad greens on a plate. Add the seasoned citrus segments, mango slices, and drizzle lightly with balsamic vinegar. Top with the crispy chicken pieces.
