Colorful spinach and lettuce salad brings together crunchy, sweet, and nutty flavors in every bite. Ingredients
1 head green leaf lettuce, torn into bite-sized pieces
1 lb fresh spinach leaves, washed and roughly chopped
1 small red or yellow onion, finely sliced
½ cup roasted unsalted peanuts, roughly chopped
¼ cup raisins
¼ cup pumpkin seeds (pepitas)
Salt and pepper, to taste
2 tablespoons vinegar (apple cider or white wine vinegar)
3 tablespoons olive oil
Instructions
Wash and dry the lettuce and spinach. Tear or chop into smaller pieces if needed.
Thinly slice the onion and roughly chop the roasted peanuts.
In a large bowl, combine the greens, onion, peanuts, raisins, and pumpkin seeds.
In a small bowl, whisk together vinegar, olive oil, salt, and pepper to make the dressing.
Pour the dressing over the salad, toss everything well, and transfer to a serving bowl.
