Ingredients:
- 30g butter
- 1 tablespoon oil
- 675g red onions
- 1 teaspoon sugar
- Salt and pepper to taste
- 120ml red wine
- 2 tablespoons flour
- 1.5L beef broth
- 1 clove garlic
- 4 slices of bread
- 120g cheese
- 4 teaspoons brandy or rum
Instructions:
- Thinly slice the onions and chop the garlic.
- Toast the bread slices.
- In a large pot, melt the butter and oil over low heat.
- Add the onions and sugar, seasoning with salt and pepper.
- Cook, stirring occasionally, uncovered for about 40 minutes.
- Pour in the wine and increase the heat. Stir for five minutes until the onions become translucent.
- Add the flour and continue stirring for another two minutes.
- Add the beef broth and bring to a boil.
- Reduce the heat, cover, and simmer for about 30 minutes.
- Divide the soup into four bowls and add a teaspoon of brandy (or rum) to each.
- Rub the bread slices with garlic and place one in each bowl.
- Sprinkle grated cheese on top and broil in the preheated oven for two minutes.
