Warm, fluffy, and slightly nutty from caraway seeds – these biscuits are an easy way to bring comforting homemade flavor to your table. They’re simple to mix, bake up golden, and taste wonderful with a bit of butter or a warm bowl of soup.
Ingredients:
2 cups whole wheat flour
1 cup buckwheat flour
2 cups all-purpose flour (divided)
1 tablespoon baking powder
1 teaspoon salt
2 teaspoons caraway seeds
1 cup ricotta cheese (or soft cream cheese)
1 cup plain Greek yogurt
¾ cup cold water
1 egg white
Instructions:
- In a large bowl, combine whole wheat flour, buckwheat flour, and 1½ cups all-purpose flour.
- Add baking powder, salt, and caraway seeds; mix well.
- Stir in the ricotta, yogurt, and egg white. Gradually pour in the cold water while mixing.
- Knead the dough for about 8–10 minutes, adding the remaining ½ cup of all-purpose flour until smooth and soft.
- Shape the dough into a log, cut into small pieces, and form round biscuits.
- Place on a parchment-lined baking sheet, brush lightly with water, and let rest for 10–15 minutes.
- Bake at 400°F for 15 minutes. Reduce heat to 350°F and bake for another 15 minutes, or until golden.
- Mist lightly with cold water after baking, cover with a clean towel, and let cool.
Tip:
Place a small oven-safe dish with water on the rack beneath your biscuits while baking. It keeps them tender inside.
