Cornmeal muffins are a delicious and easy-to-make snack. These soft, cheesy biscuits are made with cornmeal, white flour, and a little baking powder.
Ingredients for 6 servings:
- 300 g fine cornmeal
- 200 g white flour (type 405)
- 1/2 teaspoon baking powder
- 3 eggs
- 200 g margarine
- 1 teaspoon salt
- 250 g cheese (quark, Philadelphia, or any other cream cheese)
- 2 dl sour water
- 1 dl milk (1.5% fat)
- 50 g finely chopped cooked ham
Preparation: Mix the flour with the baking powder, then add the cornmeal and combine. Whisk 3 egg whites into stiff peaks. In another bowl, mix 3 egg yolks, 200 g margarine, and 1 teaspoon of salt using a mixer. Add the whipped egg whites and mix well. Add the cheese and 1 dl of milk. Mix the batter and gradually add the flour and sour water. Once the mixture is well-combined, stir in the chopped ham. Grease a 12-cup baking tray with margarine and fill each cup with a heaping tablespoon of the mixture. This will be enough for about 24 cups (2 trays). Bake at 200°C for the first 15 minutes, then increase the temperature to 250°C and bake for another 10 minutes until golden brown. Repeat the same for the second tray. Serve hot.
Note: These are especially delicious when served warm.
