This classic salted cod with potatoes brings a taste of the Adriatic straight to your kitchen. Tender cod, golden pan-fried potatoes, and the aroma of garlic and fresh parsley make this dish perfect for a cozy family dinner or special occasion. Rustic, flavorful, and easy to prepare, it’s a timeless favorite.
Ingredients:
1.5 lbs salted cod, soaked and prepared
1 lb potatoes
3–4 cloves garlic, sliced
2 tbsp olive oil
Salt and freshly ground black pepper, to taste
2 tbsp fresh parsley, chopped
Instructions:
Place salted cod in a large bowl and cover with cold water. Soak for 24 hours, changing the water several times. After soaking, drain, gently pound with a meat mallet, peel off the skin, and soak in fresh cold water for another 24 hours.
Drain the cod, place in a pot, cover with fresh water, and simmer over medium heat for about 1 hour until tender. Remove any bones and remaining skin.
Boil potatoes in their skins until tender, about 20–25 minutes. Drain, peel, and cut into lengthwise slices.
Heat olive oil in a large skillet. Lightly sauté the garlic slices, then remove and set aside. In the same oil, lightly fry the potato slices, then layer the garlic and prepared cod on top. Simmer gently, shaking the pan occasionally, and season with salt and pepper.
Sprinkle with chopped parsley and extra garlic if desired. Serve warm.
Extra Tip: For extra flavor, drizzle with fresh lemon juice just before serving or add a pinch of smoked paprika to the cod.
