These Fasting cakes do not use animal-derived products like eggs, milk, or butter, making them suitable for fasting.

Fasting Banana Cake

Ingredients for 10 servings:

  • 500 g biscuits (fasting-friendly biscuits)
  • 3 bananas
  • 125 g margarine
  • 2 packets of vanilla pudding
  • 100 g raisins
  • 100 g jelly candies (finely chopped)
  • 100 g chopped walnuts
  • 100 g ground walnuts
  • 200 g toasted almond flakes
  • A small amount of apricot jam

Preparation:

  1. Cook the vanilla pudding using water instead of milk.
  2. Once cooled, add margarine and mix until smooth.
  3. Incorporate ground biscuits, sliced bananas, chopped and ground walnuts, raisins, and finely chopped jelly candies.
  4. Shape the mixture into a cake form.
  5. Spread a thin layer of apricot jam on the cake and cover it with plenty of toasted almond flakes.

Fasting Honey Cake

Ingredients:

  • 1 cup honey
  • 1 cup water
  • 1 tsp baking soda
  • Flour (as needed for soft dough)
  • 2 cups sugar
  • 3 cups walnuts
  • 3 tbsp oil
  • 2 tbsp rum
  • 2 tbsp cocoa powder
  • A dash of lemon juice
  • 150 g powdered sugar
  • 1 cup ground walnuts

Preparation:

  1. Combine water, honey, oil, baking soda, and enough flour to create a soft dough.
  2. Bake at a moderate temperature until golden brown and let it cool.
  3. Caramelize sugar with water until thickened, then add ground walnuts, rum, cocoa powder, and lemon juice. Mix well and let cool.
  4. Slice the baked cake in half to create two layers.
  5. Spread the filling between the layers.
  6. Whisk powdered sugar with rum to make a glaze.
  7. Pour the glaze over the cake and let it set before slicing.

Fasting Black Forest Cake

For the sponge cake:

  • 150 g sugar
  • 2 dl water
  • 5 tbsp flour
  • 2 tbsp cocoa powder
  • 2 tbsp oil
  • 2 tbsp jam
  • 1 tsp baking soda
  • 3 tbsp ground biscuits

For the cherry filling:

  • 600 g frozen cherries (cooked in their juice)
  • 300 g sugar
  • 1 dl water

For the cream:

  • 1 dl cherry syrup (from the cooked cherries)
  • 500 ml fasting-friendly whipped cream

Preparation:

  1. Bake the sponge cake on parchment paper.
  2. Cook cherries with sugar and water for about 15 minutes. Separate 1 dl of the syrup and let it cool, then mix with whipped cream.
  3. Layer the cake with sponge, cherries, and whipped cream in that order.

Other Fasting Cakes:

Fasting Layered cake I: : Thin layers baked individually, filled with caramelized sugar and margarine filling.

Cake Layers:
Prepare a smooth dough using:

  • 3 cups of honey
  • 3 cups of oil
  • 3 cups of water
  • 1 packet of baking powder
  • Flour as needed

From this dough, make 8-10 layers by baking them on inverted baking trays.

Filling:

  1. Place 500 g of sugar and 4 tablespoons of flour in a 2-liter pot. Caramelize the mixture while stirring constantly.
  2. Gradually add 1 liter of water and cook slowly until all the hardened pieces dissolve and the filling thickens.
  3. Add 3 pieces of chocolate and 1.5 blocks of margarine. Mix well and let it cool slightly.
  4. Once the filling is ready, spread it over each baked layer as they cool, stacking them one on top of the other.
  5. Melt 150 g of chocolate and mix it with 1 tablespoon of oil. Pour the chocolate glaze over the assembled cake.

Fasting Layered cake II: Layers made with margarine, sparkling water, and flour, filled with a caramel pudding-like filling.

Cake Layers:

  1. Beat together:
    • 1 block of margarine
    • 1 cup of sparkling water
    • 1 cup of oil
    • 200 g of powdered sugar
  2. Add flour and knead into a dough.
  3. Bake 3-4 layers.

Filling:

  1. Caramelize 250 g of sugar.
  2. Add 1 liter of water and let it cool.
  3. Mix in 9 tablespoons of flour and cook the mixture until it thickens (similar to pudding).
  4. Once cooled, add whipped margarine to the mixture.

Fasting Emina Cake: Three differently flavored layers (cocoa, raspberry, and plain) filled with a walnut and citrus filling.

Cake Layers:

  • 6 cups of oil
  • 6 cups of sugar
  • 8 cups of water
  • 1/4 packet of yeast
  • 1/2 teaspoon of baking soda

Mix all the ingredients with 0.5 kg of flour to form a dough. Divide the dough into three parts:

  1. Add 1 tablespoon of cocoa to the first part.
  2. Add raspberry extract to the second part.
  3. Leave the third part plain.

Let the dough rest for about 1 hour. Bake each part separately in a baking pan lined with parchment paper at a low temperature (about 150°C).

Filling:

  1. Melt 400 g of sugar until it caramelizes.
  2. Scald 400 g of ground walnuts with the caramelized sugar.
  3. Add grated orange zest, a little lemon zest, and 1 packet of vanilla.
  4. Sprinkle each layer with orange juice and spread with the filling.

Topping:
Cover the cake with pink fondant.

Fasting Sponge Cake: Thin honey-flavored layers filled with a chocolate walnut filling.

Cake Layers:

  • 150 g honey
  • 100 g sugar
  • 3 cups of water
  • 1 teaspoon baking soda
  • 200 g flour

Mix the ingredients and bake 3 layers.

Filling:

  • 0.5 l water
  • 250 g sugar
  • 150 g ground walnuts
  • 2 pieces of chocolate

Cook the sugar and water until dissolved. Add walnuts and chocolate to the hot mixture. Use as filling between layers.

Fasting Pink Cake: Layers baked with white wine and filled with a walnut caramel filling.

Cake Layers:
(Measured with a yogurt cup)

  • 1 cup of white wine
  • 1 scant teaspoon baking soda (or baking powder)
  • 1 scant cup of oil (about 150 g)
  • 1/2 cup powdered sugar

Combine with approximately 0.5 kg of flour to form a dough. Divide into 8-9 layers. Bake the layers on an inverted baking tray.

Filling:

  • 350 g sugar, caramelized
  • 300-400 g walnuts
  • 1 packet of vanilla
  • 1 block of margarine

Mix the ingredients into a hot filling. Spread while warm. Cover the cake with fondant.

Fasting Rozen Cake

Cake Layers:
Bake the layers as for Layered Cake.

Filling:

  • 400 g sugar
  • 2 cups water
  • 0.5 kg walnuts
  • 1 block of margarine

Boil sugar and water until dissolved. Add walnuts and margarine. Spread the warm filling between the layers.

Glaze:

  • 1 packet powdered sugar
  • 1 tablespoon oil
  • Juice of half a lemon
  • A small amount of boiling water (to create the desired consistency)

Mix and add flavoring extract. Use as a topping.

Fasting Apple Cake: Grated apples mixed with sugar and spices, baked as a single layer, topped with a chocolate glaze.

Cake Base:

  • 1 kg grated apples mixed with 250 g sugar (let sit for 2 hours)
  • 250 g semolina
  • 1 orange
  • 1 packet baking soda
  • 1 packet cinnamon
  • 200 g oil
  • 4 tablespoons flour

Bake the mixture into a single base.

Filling:
Melt 5 pieces of chocolate with 300 g sugar and 1 tablespoon oil. Pour over the baked base.

Fasting Beer Cake: Layers made with walnuts and beer, filled with a walnut caramel filling.

Cake Base:

  • 250 g walnuts
  • 250 g flour
  • 250 g sugar
  • 1 packet vanilla
  • 1 teaspoon baking soda
  • A pinch of nutmeg

Combine all ingredients with a bottle of beer. Bake in 2 layers.

Filling:
Caramelize 200 g sugar and add 200 g ground walnuts. Spread the warm filling between the layers and sprinkle with ground walnuts on top.
