Incredibly delicate eclairs that melt in your mouth. An elegant classic dessert.
Ingredients:
- 1 cup of water
- 1 pinch of salt
- ½ cup of oil
- 1 cup of flour
- 4 eggs
Preparation time: 30 minutes
Cooking time: 35 minutes
Cream Filling:
- 2 cups of water
- 1 cup of sugar
- 5 tablespoons of flour
- 2 egg yolks
- A lump of butter
- Powdered sugar for dusting
Instructions:
- In a saucepan, combine the water, oil, and pinch of salt. Bring to a boil.
- Gradually add the flour while continuously stirring with a wooden spoon. A sticky dough will form. Add the eggs one at a time, mixing well after each addition.
- Using a pastry bag, shape the eclairs on a baking tray lined with parchment paper. Bake in a preheated oven at 200°C (392°F) for 15 minutes, then reduce the temperature to 175°C (347°F) and bake for an additional 15 minutes.
- Allow the eclairs to cool completely on a wire rack.
While the eclairs are cooling, prepare the cream filling:
- In a saucepan, bring the water and sugar to a boil.
- Gradually add the flour mixed with a little cold water, stirring until smooth.
- Add the beaten egg yolks and mix until well combined. Finally, add the butter for shine.
- Once the eclairs are completely cool, fill them with cream using a pastry bag, or cut them in half with a sharp knife and fill them with a small spoon.
Serve dusted with powdered sugar or drizzled with melted chocolate.
This recipe makes approximately 40 eclairs.
