Ice Cream Cake

Ingredients:

  • 1 cup + 2 tablespoons whipped cream
  • 1 1/4 cups whipped cream
  • 4 eggs
  • 3/4 cup chopped roasted hazelnuts
  • Cocoa powder (to taste)
  • Candied fruits (optional)
  • Jelly candies (optional)

Instructions:

  1. Grease a large pot with butter or margarine.
  2. Whip 1 cup + 2 tablespoons of whipped cream with 3/4 cup water. Once whipped, add 4 egg yolks and 3/4 cup chopped hazelnuts.
  3. Pour this mixture into the pot as the first layer and place it in the freezer.
  4. Whip the remaining 1 1/4 cups of whipped cream with 3/4 cup of water and add 2-3 tablespoons of cocoa powder or 3.5 ounces of melted chocolate. Pour this over the first layer and return to the freezer.
  5. Whip the 1 1/4 cups of whipped cream with 1 1/2 cups of water, then fold in 4 egg whites beaten to stiff peaks. Add chopped jelly candies, candied fruits, chopped pistachios, or soaked raisins in rum, or fresh fruits, and pour this as the third layer into the pot. Return to the freezer.
  6. The next day, place the pot in a larger bowl with warm water to loosen it, then turn it out onto a plate. Any leftover cake can be returned to the freezer.

Frozen Cake

Dough:

  • 6 egg yolks
  • 6 tablespoons sugar
  • 6 tablespoons flour
  • 1 packet baking powder
  • 6 egg whites (stiff peaks)

Instructions:

  1. Mix together the ingredients and bake at 350°F (175°C) until golden brown.
  2. Once cooled, cut the cake in half and spread with cream.

Cream:

  • 1 1/4 cups powdered sugar
  • 6 egg yolks
  • 1 cup butter
  • 7 ounces chocolate
  • 6 egg whites (stiff peaks)

Instructions:

  1. Mix together and cook until thickened, then allow to cool.
  2. Fold in whipped egg whites to the cooled mixture.

Parfait Cake

Dough:

  • Bake a thin sponge cake as per usual recipe instructions.

Cream:

  • 6 egg yolks
  • 1 1/4 cups sugar
  • 1 1/2 cups water
  • 3 tablespoons gelatin
  • 3 1/4 cups heavy cream

Instructions:

  1. Cook the egg yolks and sugar mixture over heat until thickened.
  2. Add gelatin to the warm mixture and let it cool.
  3. Once cooled, fold in whipped heavy cream.
  4. Pour this mixture onto the baked sponge cake and let set in the refrigerator.

Yogurt and Strawberry Cake

Dough:

  • 3 eggs
  • 1/3 cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons melted butter

Filling:

  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 1/2 cups plain yogurt
  • 7 egg yolks
  • 3 sheets gelatin
  • Juice of 1 lemon
  • Jelly glaze for topping

Instructions:

  1. Bake the sponge cake.
  2. For the filling, cook the egg yolks and sugar over steam, then add the melted gelatin.
  3. Once the mixture cools, fold in yogurt and whipped cream.
  4. Pour the filling onto the cooled cake (use a cake ring if needed).
  5. Once the filling has set, top with strawberries and jelly glaze.
