Regular french fries had a good run. For decades they dominated burger joints, diner plates, and fast-food bags without serious competition. Then sweet potato fries arrived—orange, caramelized, slightly sweet, and somehow feeling virtuous even when deep-fried. What started as a trendy alternative in upscale gastropubs has become a staple on home dinner tables, and for good reason. Sweet potatoes bring natural sugars that transform into deep, complex flavor when they hit hot oil or a roaring oven. The challenge has always been texture: achieving that shattering exterior without ending up with limp, soggy sticks. Too many home versions fail because sweet potatoes contain more moisture than their white cousins, which means the standard fry method needs a few clever adjustments. The recipe below solves that problem with a light cornstarch coating and a two-stage bake that drives off steam before the final crisping blast. The result is fries that are genuinely crunchy on the outside, creamy within, and addictive enough to make you forget the ketchup entirely.
Crispy Sweet Potato Fries
Ingredients:
- 2 large sweet potatoes (about 1.5 lbs total), peeled
- 2 tablespoons cornstarch
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
For the dipping sauce:
- 1/2 cup mayonnaise
- 1 tablespoon sriracha
- 1 teaspoon honey
- 1/2 teaspoon lime juice
Instructions:
Preheat the oven to 425°F. Position one rack in the center and another in the upper third. Line two large baking sheets with parchment paper.
Cut the sweet potatoes into uniform matchsticks, about 1/4 inch thick. Soak them in cold water for at least 30 minutes, or up to 2 hours. This draws out excess starch and sugar, which prevents burning and promotes crispness.
Drain the fries and spread them on a clean kitchen towel. Pat completely dry—every drop of moisture fights against crunch.
Transfer the dried fries to a large bowl. Sprinkle cornstarch over them and toss gently until evenly coated. The cornstarch creates a thin, starchy shell that turns shatteringly crisp in the oven.
Drizzle with olive oil, then add smoked paprika, garlic powder, salt, black pepper, and cayenne if using. Toss until every stick is glossy and seasoned.
Arrange the fries in a single layer on the prepared baking sheets, leaving space between each one. Crowding traps steam and creates soggy fries.
Bake on the center rack for 15 minutes. Remove from the oven, flip each fry with a spatula, and return to the upper-third rack. Bake another 10 to 15 minutes until the edges are deeply golden and the surfaces look blistered and crisp.
While the fries bake, stir together mayonnaise, sriracha, honey, and lime juice in a small bowl.
Let the fries rest on the baking sheet for 2 minutes before transferring to a serving platter. This resting period allows the exterior to set. Serve immediately with the spicy-sweet dipping sauce.
