Rice fritters have been a part of traditional European home cooking for generations—especially in households where nothing goes to waste. Using leftover rice to create something new, sweet, and comforting was common in many Balkan, Mediterranean, and even Italian kitchens. Over time, these humble little fritters evolved from a simple way to use up leftovers into a comfort food.

Ingredients

For the Rice:

  • ¾ cup Arborio rice
  • 2 cups whole milk
  • 2 tablespoons granulated sugar
  • Zest of 1 orange
  • Zest of 1 lemon
  • Pinch of salt

For the Batter:

  • 2 large eggs (whites and yolks separated)
  • 3 tablespoons unsalted butter, softened
  • ¾ cup all-purpose flour
  • 2 teaspoons baking powder
  • 5 tablespoons sugar (divided: 2 ½ + 2 ½ tablespoons)
  • Vegetable oil for frying
  • Extra sugar for coating (optional)

Instructions

  1. Cook the Rice
    In a saucepan, combine milk, a pinch of salt, orange zest, and lemon zest. Bring to a gentle boil, then stir in the rice. Cook on medium heat, stirring often, until the rice absorbs all the milk and becomes soft—about 15–20 minutes. Let it cool completely.
  2. Whip the Egg Whites
    In a separate bowl, beat the egg whites with 2 ½ tablespoons of sugar until stiff peaks form.
  3. Mix the Batter
    In another bowl, combine the cooled rice with egg yolks, softened butter, and the remaining 2 ½ tablespoons of sugar. Mix well. Gently fold in the whipped egg whites to keep the mixture light and airy.
  4. Fry the Fritters
    Heat vegetable oil in a deep pot over medium-high heat. Using an ice cream scoop or spoon, scoop the batter (about half full per scoop) and gently drop into the hot oil. Fry for about 5 minutes, turning occasionally, until golden brown on all sides.
  5. Drain & Coat
    Remove from oil and place on paper towels to drain excess oil. Roll in sugar while still warm if desired.
