Crispy Pumpkin Balls

- ½ small onion, finely chopped (about 1 small onion)
- 1 tablespoon chopped fresh parsley
- 1 cup plain breadcrumbs
- Salt, black pepper, and all-purpose seasoning to taste
- ¼ cup cornmeal
- About 2 cups vegetable oil (for frying)
- About 15 green olives
Instructions:
- In a large bowl, combine the cooled mashed pumpkin, onion, parsley, salt, pepper, seasoning, and breadcrumbs. Mix until well combined.
- Form mixture into balls using about 1 tablespoon per ball. Press one green olive into the center of each.
- Roll each ball in cornmeal to coat evenly.
- Heat oil in a pan over medium-high heat. Fry the balls in batches, turning occasionally, until golden brown on all sides.
- Transfer to paper towels to drain excess oil.
- Place the fried balls on a baking tray lined with parchment paper. Bake at 400°F for 20 minutes.
- Serve warm as a snack or appetizer.
