Crispy Apricot Tart is a great idea for a refreshing and flavorful dessert. With its buttery crust, sweet apricot filling, and crunchy almond topping, it’s perfect for any occasion.
Ingredients:
For the crust:
- 200 g flour
- 5 tablespoons sugar
- A pinch of salt
- 1 egg
- 100 g butter
For the filling:
- 600 g ripe apricots
- 1 tablespoon lemon juice
- 75 g chopped almonds
- 2 tablespoons powdered sugar
- 150 g apricot jam
- 4 tablespoons apricot liqueur
Preparation:
In a large bowl, combine flour, sugar, and salt. Make a well in the center, break an egg into it, add the butter cut into pieces, and mix everything well to form a uniform dough. Shape the dough into a ball, wrap it in foil, and chill it in the fridge for about 30 minutes to firm up.
Preheat the oven to 200°C. Roll out the dough and place it on a greased baking tray lined with parchment paper (about 25 cm in diameter).
Blanch the apricots by placing them in hot water for about 1 minute, then peel, pit, and slice them. Arrange the apricot slices evenly on the dough and sprinkle with half of the chopped almonds. Dust with powdered sugar and bake for about 30 minutes.
Heat the apricot jam, strain it through a sieve, and mix in the apricot liqueur. Once the tart is baked, remove it from the oven and brush the surface with the melted jam. Sprinkle the remaining chopped almonds along the edges. Place the tart in the fridge to allow the glaze to set. Serve with coffee, tea, or milk.
