Ingredients:

- 500 g (1 lb) pasta of your choice
- 200 g (7 oz) bacon, diced
- 100 g (3.5 oz) Parmesan cheese, grated
- Salt and pepper to taste
- For the Sauce:
- 150 ml (2/3 cup) milk
- 100 g (3.5 oz) grated cheese (cheddar or any melty cheese)
- 100 ml (1/2 cup) cooking cream
- 2 tablespoons butter
- 2 medium onions, finely chopped
- 2 tablespoons all-purpose flour

- Melt the butter in a pan over medium heat. Add the chopped onions and sauté until translucent.
- Stir in the flour and cook for 2-3 minutes, stirring constantly, until it forms a light roux.
- Gradually pour in the milk and cooking cream, whisking continuously to prevent lumps.
- Bring the mixture to a boil, season with salt and pepper, and let it simmer on low heat for about 15 minutes.
