Broccoli and cauliflower with cheese is a healthy and delicious dish that works perfectly as a side.

Ingredients

  • 8.8 oz broccoli
  • 8.8 oz cauliflower
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground nutmeg (optional)
  • Salt and black pepper, to taste
  • 1/2 cup breadcrumbs
  • 1 tablespoon olive oil

Instructions

Preheat the oven to 400°F. In a large pot, bring salted water to a boil. Add the broccoli and cauliflower florets, cooking them for 3–4 minutes. Drain and transfer them to a greased baking dish.

Melt the butter in a saucepan over medium heat. Stir in the flour and cook for about 1 minute to make a roux.

Slowly add the milk while continuously whisking until the sauce thickens. Stir in the onion powder, nutmeg, salt, and pepper. Add the cheddar and Parmesan cheese, and stir until melted and smooth.

Pour the cheese sauce over the broccoli and cauliflower. Gently stir to ensure the vegetables are evenly coated.

In a small bowl, mix the breadcrumbs with the olive oil. Sprinkle this mixture evenly over the casserole.

Place the dish in the preheated oven and bake for 20–25 minutes, or until the top is golden brown and bubbly.

Let the casserole cool for a few minutes before serving. Garnish with fresh parsley if desired. It pairs perfectly as a side dish with roasted chicken or fish.
