Ingredients:
- 10 to 12 firm garlic cloves
- 3 to 4 egg yolks
- 1 tablespoon fresh lemon juice (adjust to taste)
- About 1 cup vegetable oil (such as canola or sunflower oil)
- Salt, to taste
- 1 to 2 tablespoons hot water (optional, to thin sauce if needed)
Peel and finely mince or crush 10 to 12 firm, healthy garlic cloves until you get a smooth paste. In a bowl, whisk together the garlic paste with 3 to 4 egg yolks until well combined.
While continuously whisking, slowly drizzle in about 1 cup of oil, a few drops at a time, to emulsify the mixture evenly. Gradually add fresh lemon juice throughout the process. The sauce should reach a medium-thick consistency, similar to mayonnaise, where the egg yolks and oil are fully blended.
Season with salt to taste. If the sauce is too thick, add 1 to 2 tablespoons of hot water all at once and quickly whisk to loosen it.
