Cream of Nettle Soup is a simple and nourishing dish made from fresh nettle leaves cooked into a smooth, creamy broth. Popular in many traditional kitchens, this soup has a mild earthy flavor and a comforting texture, making it perfect for a light meal or healthy starter.
Ingredients:
- 2 cups fresh nettle leaves, finely chopped
- 1 tablespoon butter or vegetable oil
- 2 cups water or light vegetable broth
- 1/2 cup sour cream
- Salt and black pepper to taste
- 1 small garlic clove, minced (optional)
Instructions:
- Wear gloves when handling fresh nettles to avoid irritation. Rinse them well and chop finely.
- In a saucepan, heat butter or oil over medium heat and lightly sauté the chopped nettles (and garlic if using) for about 1–2 minutes.
- Pour in the water or broth and season with salt and black pepper. Bring to a gentle boil.
- Reduce heat and stir in the sour cream.
