This version gives traditional cornbread a delicious twist with juicy cranberries, a hint of orange, and a touch of honey. The result is a beautiful balance of sweet, tangy, and buttery flavors, with a golden crust and a soft, tender center.
Serve it alongside a holiday dinner, enjoy a slice with your morning coffee, or warm it slightly and spread it with butter. It’s simple to prepare, easy to share, and a lovely way to bring seasonal flavor to an everyday favorite.
Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/3 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 3/4 cup buttermilk
- 1/3 cup unsalted butter, melted and slightly cooled
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 tablespoon finely grated orange zest
- 1 cup fresh or frozen cranberries, roughly chopped
- 1 tablespoon all-purpose flour (for coating the cranberries)
Instructions
Preheat your oven to 375°F. Lightly grease an 8-inch square baking pan or a 9-inch round cake pan.
In a large bowl, combine the cornmeal, flour, sugar, baking powder, baking soda, and salt. Whisk until evenly mixed.
In a separate bowl, beat the eggs with the buttermilk, melted butter, honey, vanilla, and orange zest until smooth.
Pour the wet ingredients into the dry mixture and gently stir until just combined. Avoid overmixing, as this can make the cornbread dense.
Toss the chopped cranberries with one tablespoon of flour, then gently fold them into the batter. Spread the mixture evenly into the prepared pan.
Bake for 25–30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
Allow the cornbread to rest in the pan for about 10 minutes before slicing. Serve warm, with a little butter or honey if desired.
Serving Idea
For an extra-special holiday presentation, brush the warm cornbread lightly with honey butter and sprinkle a little orange zest over the top. It makes a beautiful addition to Thanksgiving and Christmas meals.
