These coconut snowball cookies are tender, buttery bites that crumble and melt in your mouth. Rolled with coconut, they bring a little taste of the tropics to winter baking and are perfect for the holidays or any cozy afternoon treat.
Ingredients:
- 3/4 cup unsalted butter, softened
- 2/3 cup powdered sugar
- 1 1/4 cups all-purpose flour
- 1 cup finely shredded coconut (sweetened or unsweetened)
- 1 teaspoon vanilla extract
- Extra shredded coconut or powdered sugar for rolling (optional)
Directions:
- Heat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Beat the softened butter with powdered sugar until creamy and fluffy.
- Stir in the vanilla, then mix in the flour a little at a time.
- Fold in the shredded coconut until the dough holds together.
- Scoop small portions of dough and roll into balls about the size of a walnut.
- Arrange on the prepared baking sheet and bake for 12–14 minutes, or until lightly golden at the edges.
- Let the cookies cool completely. For extra sweetness, roll in powdered sugar or sprinkle with more coconut before serving.
