These coconut snowball cookies are tender, buttery bites that crumble and melt in your mouth. Rolled with coconut, they bring a little taste of the tropics to winter baking and are perfect for the holidays or any cozy afternoon treat.

Ingredients:

  • 3/4 cup unsalted butter, softened
  • 2/3 cup powdered sugar
  • 1 1/4 cups all-purpose flour
  • 1 cup finely shredded coconut (sweetened or unsweetened)
  • 1 teaspoon vanilla extract
  • Extra shredded coconut or powdered sugar for rolling (optional)

Directions:

  1. Heat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat the softened butter with powdered sugar until creamy and fluffy.
  3. Stir in the vanilla, then mix in the flour a little at a time.
  4. Fold in the shredded coconut until the dough holds together.
  5. Scoop small portions of dough and roll into balls about the size of a walnut.
  6. Arrange on the prepared baking sheet and bake for 12–14 minutes, or until lightly golden at the edges.
  7. Let the cookies cool completely. For extra sweetness, roll in powdered sugar or sprinkle with more coconut before serving.
