Ingredients:
- 1 tablespoon oil
- 1 large onion, finely chopped
- 1 lb ground beef or pork
- 1 tablespoon roasted red pepper spread (or ajvar)
- Salt and pepper, to taste
- 1/4 cup milk
- 1 tablespoon all-purpose flour
For the pasta:
- Lasagna sheets (12–15 pieces)
- Water with 1 tablespoon oil (for boiling)
For the béchamel sauce:
- 7 tablespoons butter (about 100 g)
- 2 cups milk (about 500 ml)
- 3 tablespoons all-purpose flour
Other:
- 2 to 2 1/2 cups shredded cheese (mozzarella, Parmesan, or a mix)
Instructions:
- Heat oil in a pan and sauté chopped onion until soft. Add ground meat and cook until browned.
- Stir in the roasted red pepper sauce and season with salt and pepper.
- Add 1/4 cup milk and 1 tablespoon flour, mixing quickly to avoid lumps. Simmer gently for a few more minutes, then remove from heat.
- Cook the lasagna sheets in boiling water with a little oil to prevent sticking. Drain and set aside.
- For the béchamel, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1–2 minutes. Gradually add milk, whisking constantly until the sauce thickens and becomes smooth.
- In a greased baking dish, begin layering: lasagna sheets, meat sauce, béchamel, and shredded cheese. Repeat the layers, finishing with béchamel and a generous layer of cheese on top.
- Bake at 375°F (190°C) for 30–40 minutes, or until golden and bubbling. Let stand 10 minutes before slicing.
Creamy Carrot Lasagna with Mustard and Cheese
This unexpected take on lasagna transforms simple carrots into the star of a rich and comforting vegetarian main dish. Layers of tender pasta, buttery carrot slices, and a velvety mustard-cheese sauce come together in a bake that’s both nourishing and indulgent. For the filling:
- 1 3/4 lbs carrots (about 800 g), peeled
- 1 tablespoon salt (for boiling water)
For the sauce:
- 3 tablespoons butter (about 40 g)
- 1/4 cup all-purpose flour
- 1 2/3 cups vegetable broth (use instant soup or 1 dissolved bouillon cube in hot water)
- 3/4 cup sour cream (200 g)
- 1 cup shredded cheese (such as Emmentaler, or substitute)
- 4–6 tablespoons Dijon or yellow mustard (adjust to taste)
- Juice of 1 lemon
- Salt and pepper, to taste
Other:
- 9–12 lasagna sheets (pre-cooked or no-boil)
- 1 tablespoon oil or butter (for greasing the pan)
- 4 tablespoons shelled sunflower seeds
Instructions:
- Bring a large pot of salted water to a boil. Add peeled carrots and cook for 3 minutes. Drain and let cool. Slice into rounds or sticks, or leave whole if small.
- In a saucepan, melt butter. Stir in flour and cook for 30 seconds, stirring constantly. Gradually add vegetable broth, whisking to prevent lumps.
- Once the sauce thickens, stir in sour cream, cheese, mustard, lemon juice, salt, and pepper. Cook on low until smooth.
- Grease a deep baking dish. Line the bottom and sides with cooked lasagna sheets, letting edges hang over the dish.
- Begin layering: carrots, a few spoons of sauce, a sprinkle of sunflower seeds, then lasagna sheets. Repeat until all ingredients are used.
