This classic Italian dessert combines layers of espresso-soaked ladyfingers with a smooth mascarpone filling and a delicate dusting of chocolate. Ingredients
- 1/2 cup freshly brewed espresso, cooled
- 2 tablespoons coffee liqueur or dark rum
- 3 large eggs, separated
- 2/3 cup granulated sugar
- 9 ounces mascarpone cheese, softened

- 1 cup heavy whipping cream
- 24 ladyfinger cookies
- 2 tablespoons unsweetened cocoa powder

Instructions
- In a small bowl, combine the cooled espresso and coffee liqueur. Set aside.
- Separate the eggs carefully. Place the yolks in a large mixing bowl and the whites in another clean bowl.
- Beat the egg yolks with the sugar for about 3 to 4 minutes, until the mixture becomes pale, creamy, and thick.
- Add the mascarpone cheese and vanilla extract to the yolk mixture. Mix until smooth and creamy.
- In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture.
- Beat the egg whites with a small pinch of salt until stiff peaks form. Carefully fold the egg whites into the mascarpone mixture to keep the filling light and airy.
- Quickly dip each ladyfinger into the espresso mixture for 1 to 2 seconds. Do not soak them too long or they will become soggy.
- Arrange half of the dipped ladyfingers in a single layer in an 8×8-inch baking dish.
- Spread half of the mascarpone filling over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
