Ingredients:
- 3 tablespoons oil
- 14 oz tofu, drained and cubed
- 8 large eggs
- 2 tablespoons soy sauce
- 1/4 cup fresh herbs, washed and chopped (like cilantro or parsley)
- 2 tablespoons finely chopped green onions
Instructions:
- Heat the oil in a large skillet over medium heat. Add the cubed tofu and sauté for about 5 minutes, stirring occasionally, until golden brown.
- In a bowl, whisk the eggs together with the soy sauce.
- Pour the egg mixture into the skillet with the tofu. Cook, stirring gently, for 3–4 minutes, or until the eggs are set.
