Who says breakfast has to be boring? This Chinese-Style Tofu Scramble with Eggs is a flavorful and protein-packed dish perfect for any time of day. With golden tofu, fluffy eggs, and a savory soy sauce twist, it’s a simple yet satisfying meal.

Ingredients:

  • 3 tablespoons oil
  • 14 oz tofu, drained and cubed
  • 8 large eggs
  • 2 tablespoons soy sauce
  • 1/4 cup fresh herbs, washed and chopped (like cilantro or parsley)
  • 2 tablespoons finely chopped green onions

Instructions:

  1. Heat the oil in a large skillet over medium heat. Add the cubed tofu and sauté for about 5 minutes, stirring occasionally, until golden brown.
  2. In a bowl, whisk the eggs together with the soy sauce.
  3. Pour the egg mixture into the skillet with the tofu. Cook, stirring gently, for 3–4 minutes, or until the eggs are set.
  4. Sprinkle with chopped green onions and fresh herbs before serving.
