This creamy chicken dish is packed with mushroom flavors and tender, juicy chicken pieces. A touch of white wine and fresh herbs elevates the sauce, making it a comforting yet elegant dinner perfect for any occasion.
Ingredients:
1 tablespoon avocado or olive oil
3 tablespoons unsalted butter
4 cups fresh mushrooms, sliced (a mix of cremini, shiitake, and oyster works well)
2 cloves garlic, minced
1 teaspoon fresh thyme leaves
Salt and freshly ground black pepper, to taste
4 bone-in chicken thighs
4 chicken drumsticks
1/2 cup low-sodium chicken stock
1/4 cup finely chopped shallot
1/3 cup dry white wine
1/4 cup heavy cream
1 teaspoon lemon zest (optional, for brightness)
1 tablespoon chopped fresh parsley, for garnish
Instructions:
Preheat oven to 325°F. Pat chicken dry and season with salt and pepper.
In a large oven-safe skillet, heat oil and 2 tablespoons butter over medium heat. Add sliced mushrooms, garlic, and thyme. Sauté until mushrooms are tender and lightly browned, about 8–10 minutes. Remove mushrooms from skillet and set aside.
In the same skillet, melt the remaining 1 tablespoon butter. Add chicken pieces skin-side down and sear until golden, about 5 minutes per side. Remove chicken and set aside.
Add shallots to the skillet and cook until soft, about 2 minutes. Pour in white wine and scrape up browned bits from the bottom of the pan. Add chicken stock and let simmer 3–4 minutes. Stir in heavy cream and lemon zest if using.
Return chicken and mushrooms to the skillet. Spoon sauce over chicken and transfer skillet to oven. Bake uncovered for 25–30 minutes, until chicken reaches an internal temperature of 165°F.
Garnish with fresh parsley and serve with rice, mashed potatoes, or crusty bread to soak up the sauce.
