Hunter’s Chicken is inspired by old European countryside recipes, with tender chicken simmered in a savory white wine sauce, smoky bacon, and a hint of lemon. It’s the kind of meal that feels like home, no matter where you’re cooking it.
Ingredients:
1 whole chicken (about 3–3.5 lb)
A few juniper berries (about 5–6)
2 bay leaves
3–4 allspice berries
1 cup dry white wine
4 oz bacon, diced
5 oz ham, chopped
1 medium yellow onion, finely chopped
1–2 tablespoons all-purpose flour
Juice of 1 lemon
2 tablespoons chopped fresh parsley
1/2 teaspoon soy sauce
Salt and freshly ground black pepper, to taste
Instructions:
Rub the chicken with crushed juniper berries, cover, and refrigerate overnight for deeper flavor.
The next day, season the chicken with salt and pepper. Stuff it with bacon pieces and place in a large pot or Dutch oven. Add the chopped ham and onion, along with the bay leaves and allspice. Pour in the white wine, cover, and simmer over medium heat until the chicken becomes tender (about 45–60 minutes).
Sprinkle in the flour, stirring gently to thicken. If the sauce becomes too thick, add a little hot water to reach the desired consistency.
Stir in lemon juice and soy sauce to taste. Adjust seasoning if needed.
Cut the chicken into smaller pieces, spoon the sauce over the top, and sprinkle with fresh parsley before serving.
This dish pairs beautifully with creamy mashed potatoes or a slice of crusty bread to soak up the rich wine sauce.
